A long time ago I started a new page called Yummy In The Tummy Recipes. Since that day… and posting my first recipe…”I’m still married roast beef” I have done zero with it. Yep! I can admit it! I’ve had a useless page floating around my website just waiting to lure you in and disappoint you. But not any more! I’m vowing to add to it often. I mean it’s not like I’m a bean pole and never eat. I love to eat and I love food. And not to toot my horn too loudly but I can make a mean dish when I put my mind to it. So this week I’d like to start anew by adding one of my favorite side dish recipes. This is a great one for using at home or for when you have pot luck type meals that you need something that travels well. Its great cold and warm so even if you have to travel distances and you beans cool down you still will have fantastic dish.

Yummy Green Beans

(Hay! My recipes my names.)

Ingredients:

● 2-3 green onions, chopped fine (I like to use both ends of the onion, white and green)

● 1 clove garlic, minced

● 1/3 cup olive oil

● 3 tbsp. lemon juice (I love using 1/2 of a fresh lemon but concentrated juice will work too)

● 1 tsp. salt

● 1 tsp. dry mustard

● 1/4 tsp. dried basil

● 1/4 tsp. dried oregano

● 1/4 tsp. dried marjoram

● 1/4 tsp. Herbs de Provence (optional but it really adds to the flavor if you have it in your “herb stash”)

● 1/4 tsp. ground black pepper

● 1 lb. fresh green beans, trimmed and snapped (always better fresh but I’ll admit to using frozen and steaming them)

Directions:

1. In a medium bowl, mix green onions, garlic, olive oil, lemon juice, salt, mustard, basil, oregano, marjoram, herbs de provence and pepper.

2. Place green beans in a steaming basket. Steam in a medium saucepan over boiling water 5 minutes, or to desired tenderness. (or use your preferred method of steaming)

3. Place green beans in a medium serving dish. Pour dressing mixture over the beans. (If traveling with this dish put dressing mixture in a separate container and pour over beans once you get to your location. Easier and cleaner.)

4. Toss dressing and beans lightly to cover.

5. Eat

I wasn’t quite prepared for photos but here you can see them in a blown up photo of a baby shower I helped host. (They’re green beans…you can’t miss em’) Like I said, this is my favorite dish to take to functions and my friends always love them and your friends and family will too.

Lastly, I want to send some special thanks to a friend of mine who gave me the kick in the butt I needed to get this page working again. Thanks J! You rock and that’s why I started with the beans! Just for you!

Tonight we stripped EJ down to her skivvies and plunked her in front of a bowl of lime green Jello. She smushed and squished. Splatted and patted. Squirted and squeezed. She found it fascinating how it would mush between her fingers. She discovered that if she squeezed her fingers open and closed fast enough her hand would make a cute little slurping sound. She kept trying to get the goo all the way to her mouth with little success instead find it slowly slithering down her little naked baby chest, leaving behind green slimy rivers of Jello like she was attacked by lime green snails. Mommy finally took pity on her and spoon fed some of the yummy goodness into her waiting mouth, which eventually turned her tongue lime green. After the spooning she continued to play in the sea of lime green on her highchair tray cramming her hand into her mouth like it was a lime green popsicle, then slapping at the puddles making them splatter everywhere, including her into her hair. Mind you her hair is a light, light brown color. Well…it was.

When mommy decided the fun time had to end before EJ painted the ceiling there was some sadness, but the fun resumed when we got to sit in the sink and get sprayed off with the sprayer. That was a new experience that was greatly enjoyed, almost as much as smashing Jello. But we might as well have sprayed her off with lime green water for all the left over lime green stains on her little, now lime green, body.

Oy vey! I have a lime green baby. I always knew, from the time she started playing the bongos on my kidneys, that she had to be part alien. Suspicions confirmed.

I’m sitting here with my fist under my chin trying to think about something to write and I’m at a loss. All I can think of are onions. Why onions you ask? Because my hand smells like onions of course. It’s that yummy smell that reminds you of something wonderful you just cooked. Its like pot roast in my hand. Um, ya, I know that’s a little extreme but I wouldn’t be myself if I wasn’t a little “off” in the “normal” department of life. Anyhoo, I’ve always been proud of the fact that I could cook a good meal. Thanks mom for teaching me! Tonight I whipped up a beef roast to feed my Dear Hubby before I disappeared to my knitting group. Ok, ok, I know I’m starting to sound like Suzy Homemaker but let me clarify that this knitting group is a bunch of my tennis ladies who have created another excuse to get together to eat and drink. None of us are great knitters, but we are learning. Its like a book club without the stress of trying to read a book in between changing diapers. But I digress… I made a roast for Hubby so he wouldn’t mind being stuck with a mad teething infant all night. I think it worked. When I got home he was still talking to me.

The reason I’m going on about food is, first off I have nothing else interesting to tell you tonight and two, I’ve been debating starting a recipe page. I want to share all that yummy goodness thats out there in the world. So without further hesitation and more boring words slapped on my keyboard to make myself feel better, (and to make myself feel like I had something important to share with you tonight), I’ll start out with the beef roast I made Dear Hubby so he’d be willing to watch EJ alone again some other night.
